Easy Stuffed Potato Skins

With the Super Bowl approaching, not to mention awards season in full swing,  there are a lot of parties coming up that need delicious appetizers. Here’s a super simple one to add to your repertoire: Easy Vegan Stuffed Potatoes!

The trick is to use baby potatoes, so they’ll be bite sized, and to mix n’ match between regular and purple. That way all the fancy colors will confuse your guests and make them think you put in more effort than you actually did, haha!

The other trick? Vegan bacon and cheese! Simply microwave the potatoes until soft, then cut in half and scoop out the centers. Prepare the filling as you would if you were making mashed potatoes (earth balance, almond milk, etc), put back in the tater skins, add your favorite toppings and bake for a few  minutes until the cheese is melted and everything is nice and hot. What could be easier? I mean, these aren’t called Super Difficult and Annoying Stuffed Potato Skins, are they? Nope. Not at all.

    Barb, have you been to Native Foods? My husband and I went to the Glendale (near Cherry Creek) location for the first time yesterday, and it was excellent. 100% plant-based. Also, Seeds is a new restaurant in Colorado Springs that features many vegan items every day. I love your Mile High Vegan Eats, and thought I’d share these two new ones – they’ve both opened within the past couple months, I think.

      Let’s just say that I’ve been to NF enough times to rack up some serious points on my “frequent diner” card 😉 I probably wont review it for my MHE’s tho… I try to focus on restaurants that aren’t all vegan/vegetarian because I feel like we all already know about them. Instead I try to find yummy vegan food at “regular” restaurants… the places our friends and family always want to eat at, haha. I do love NF though! I haven’t eaten at Seeds, but I have heard about it. Hopefully I’ll get a chance to try it out soon!

    I like that you used purple potatoes! Very pretty! If I didn’t already have my Super Bowl menu planned out I would totally make these.

    I love purple potatoes and anything bite size….we however don’t really get into the super bowl, just the food that comes along with it!
