Peanut Butter Cookies
Easily our all-time favorite cookies. Trapper is our family’s master cookie chef. He likes to roll them into 1½"-diameter balls and then press them flat using the tines of a fork to make a nice space for the chocolate square. The texture will vary depending upon the brand of peanut butter used. The cookie dough should stick together like play dough when pressed. If you find your dough crumbling, add water in increments of 1 tablespoon. If it’s sticky, add ground flaxseeds in increments of 1 tablespoon. In a word, perfection!

Ingredients
  1. 1 teaspoon coconut oil
  2. 2 tablespoons ground flaxseeds
  3. 1/4 cup filtered water
  4. 1 cup organic, natural-style crunchy peanut butter
  5. 1 1/4 cups organic sugar
  6. 2 teaspoons high-quality vanilla extract
  7. 1 bar Mayan dark chocolate or high-quality organic specialty chocolate (vegan)
  8. 1 teaspoon large-grain Celtic sea salt
Instructions
  1. Preheat the oven to 350°F and grease a cookie sheet with the coconut oil using a paper towel.
  2. To make a flaxseed egg, mix the ground flaxseeds and the filtered water. Let stand for 2
  3. minutes and then whisk until the mixture has an egg-like texture. Add more filtered water as
  4. needed to get the consistency of an egg.
  5. In a medium bowl, mix the peanut butter and sugar, flaxseed “egg,” and vanilla with clean
  6. hands until well combined.
  7. Roll 1 1/2 tablespoons of the mixture into smooth balls and place about 1" apart on the
  8. prepared baking sheet.
  9. Press flat using a fork, making a lined pattern on the cookies.
  10. Press one square of dark chocolate in the center of each cookie. Strategically place large sea
  11. salt crystals on top of the cookies.
  12. Bake, until golden around the edges, 10 to 12 minutes. Let cool until they are slightly warm.
  13. Carefully transfer to a serving plate using a spatula.
  14. Devour.

    Since switching from lacto-ovo vegetarian to whole food plant-based, my acne has cleared, and I lost the annoying 5-7 lbs. every woman is trying to get rid of.

    Prior to switching over, I was constantly tired and felt like I was not getting good quality sleep. I now sleep wonderful and wake up super energized. I also have lost some weight and have a smaller midsection.

    I’m eating a much greater variety of foods since becoming vegan a few years ago. I’m also enjoying clearer skin. Most importantly, I feel so much more connected to other living things. Compassion for life! This book sounds wonderful. xo

    Since switching to a plant based diet, my blood pressure has lowered, I no longer feel bloated from too much sodium, I have more energy and lost weight!

    Less headaches! I can always tell when I’ve had a few days of yucky eating because the headaches start back up. Loading up on plant-based goodness always gets rid of them!

    In the 3+ years that I have been vegan I have lost nearly 100 pounds! It’s been a slow process but SO worth it!

    Once I went vegan, I rarely get sick. I very occasionally get head colds, and they are pretty weak compared to what I use to get.

    being plant based has tons of benefits. One of the best is that I never get sick. I used to have a cold every other week!

    Like most people when I switched to a plant based diet I lost weight, my skin improved, I had more energy, improved digestion and overall a better outlook. The greatest side effect has been an improved relationship with food. I had an eating dissorder in my teens and by changing my diet I no longer have to meticulously count calories and worry about how much I eat. By switching to whole foods, I’m able to eat in abundance and feel good about fuelling my body properly.

    Before I ate plant based my cholesterol was over 220 and my asthma was out of control. My cholesterol is around 160 and I take my inhaler maybe 3 times a year compared to 3 -6 times per week. I also lost weight, but was not overweight when I started a plant based diet. I thought I ate right and I worked out at least 3 times a week. I feel so much better than I did before I changed my diet!

    I’ve experienced many positive effects: My skin looks better, I’m losing weight, and I have far fewer migraines than I used to. What we eat and don’t eat does make a huge difference to our health!

    I almost never get sick, in fact even while my son was in those early-daycare-bring-home-every-cootie-possible days I only got sick when he brought home a stomach virus (I think those are impossible to avoid). I also can’t remember the last time I had a migraine even though they used to be debilitating (and I suspect triggered by dairy). The best part of going plant based though is that I feel more compassionate for the world as a whole. I’m as compassionate to the pesky fly buzzing around my head as I am to my beloved dog. I did not become plant based due to moral reasons, but becoming plant based has deepened my morality.

    Rich Roll’s book on becoming a vegan ultra runner got me through my first marathon training cycle. I listened to it on my ipod, it kept me going even when i wanted to quit on those long, long runs!

    Since I started eating a plant based diet, my digestion has improved. I have a really sensitive stomach, so this change benefited me the most. I’ve also found that my hairs and nails seem healthier and stronger.

    When I became vegan over 10 years ago I lost ~30lbs. Over the years I’ve become lacto-vegetarian and gained back ~20 of those pounds, but of muscle insteada fat. The number one healthiest side effect is being aware of my weight and being more in tune with what I’m putting into my bod

    Perhaps this isn’t quite the response you’re looking for, but mentally I’m so much healthier because I know that when I eat, I’m not harming animals, and that’s so huge. Overall, I’m very physically healthy as well, but mentally has been so big for me.

    I love being vegan–I used to have an upset stomach very frequently, but now the worst that I get is some gurgling when I chow down on lentils and beans! A little digestive enzyme fixes that right up, too. Way better than being sick all the time, I’d say.

    Digestively I feel so much lighter since going to a plant strong diet. I feel like I can eat a good meal and feel satisfied, not like I have a ton of brick sitting in my stomach.

    Almost no acne, a healthy skin in general. In highschool and college a lot of people my age suffered from horrible acne, and I believe that my plant-based diet was the reason for my good skin. My partner, who use to drink milk, had horrible acne until I asked him to try avoiding milk. Now he avoids it all the time to feel healthier and have better skin!

    I think my hair feels softer because of all the healthy plants I’m eating, and I’m slimmer.
