Four-Ingredient Chocolate Chip Oatmeal Cookies
Yields 16
Oh yeah! These delectable little cuties are so simple to make, you just may want to make a double batch. With only four ingredients, you can’t go wrong with this easy twist on a classic cookie.

Ingredients
  1. 2 large, ripe bananas
  2. 1¼ cups rolled oats
  3. 1⁄3 cup raisins
  4. 1⁄3 cup vegan dark chocolate chips
Instructions
  1. Preheat the oven 375 degrees F. Line a large baking sheet with unbleached parchment paper.
  2. Put the bananas in a medium-sized bowl and mash with a potato masher or large fork until smooth. Add the oats, raisins and chocolate chips; stir to combine.
  3. Using a cookie scoop or large spoon, drop a heaping tablespoonful of the cookie batter onto the lined baking sheet, gently flattening it with a rubber spatula or clean fingertips. Continue in this manner with the remaining cookie dough.
  4. Bake for 13 to 17 minutes, or until the edges are golden brown and cookies are almost set. Transfer the cookies to a wire rack and let cool for 10 minutes. Stored in an airtight container in the refrigerator, cookies will keep for about 3 days.

    I’m not sure exactly how often I use a cookbook, but I’d say several times a week. I use them especially if I need to be precise with a recipe, like with baking.

    I cook from a book at least 3 times per week because I love incorporating new meals into my regular rotation.

    I use a cookbook once or twice a week, I also use recipes from blogs. I’d love to have this book for my cousin who needs easy vegan meals!

    I look up recipes online more often these days than reaching for a cookbook, but there are a few cookbooks that are like old friends, like my mom’s beat-up, food-crusted copy of The Vegetarian Epicure from the 70’s.

    Laura’s recipes are always delicious and the prep is easy. I have all her previous cookbooks. I can’t wait to try these cookies.

    I also look on-line for ideas.

    I cook from a cookbook about 50% of the time and the other 50% I use recipes I find online, I like that you can read other peoples reviews.

    I almost always cook from a recipe because I want what I’m taking my time to make…to turn out great! Not having time to experiment on my own, I always turn to an ever increasing assortment of great cook’s books to guarantee my success. I just need more time and more bookshelves…love my cookbooks!

    I am a cookbook junkie. I love to buy them and read them like they are novels. I probably don’t use them as much as I should. I tend to go to the internet first when I need a recipe real quick. So I’d say I use them about 30% of the time.
