Since moving to Denver I’ve felt lucky to be surrounded by so many vegan dining options. Some are hidden gems, and some, like Root Down, are pretty well known within the vegan community. And why wouldn’t it be? Just look at that menu, plenty of “vegan by request” options on there. And really, doesn’t seeing the word “vegan” on a menu just make you all squishy inside?

Root Down has been on my dining wishlist for nearly 2 years, I just never quite made it there… Until now. I went with a small group and although I was the only vegan, everyone was more than happy to eat plant-based with me, and (most importantly) to let me eat off their plates ;)

Before we get to the food though, let’s just talk about the restaurant itself. It resides in what used to be a service station, and has a really great vibe.  A little trendy, a little industrial, and  very comfortable and inviting.

And now, the food. First up was the Sweet Potato “Falafel”, topped with an Israeli salad, sesame seeds and chile oil:

Mile High Vegan Eats: Root DownThey were crispy, and the sweetness of the potatoes went perfectly with the chile oil. I could’ve eaten 3 more, honestly.

Next we tried the Veggie Burger Sliders:

I dipped everything in that sauce, the sliders, the sweet potato fries and possibly even my spoon, ha ha. The sliders themselves were tasty and perfectly cooked. If only all restaurants served handmade veggie burgers like this!

I also sampled the Stir Fry Tofu which was served over this mushroom risotto cake that I’m not sure I can even accurately describe:

Mile High Vegan Eats: Root DownIt was literally a cake of risotto, all crispy on the outside and smooth and creamy on the inside. I don’t know if they fried it or baked it or how exactly they got it that way, but it was divine! There were also tons of veggies including carrots, eggplant, anaheim peppers and garlic, and it was all topped off with a coconut cream and spicy date sauce. This was seriously delicious. The tofu itself was cooked the way it was meant to be (in my opinion), it was crispy on the outside and soft, almost flaky on the inside. In a way it reminded me of breaded fish, although it tasted nothing like that of course.

Confession time… I don’t really remember exactly what this was. It was strawberry sorbet with oats and sweet celery. I think maybe it was deconstructed apple pie, but I might be wrong. I didn’t take notes because I rely on the menu to help prompt me, but it was a special that night and so it’s not listed. All I can say for certain is that it was delicious, hope that helps, ha ha.

Okay, so now we’re going to switch gears and talk about the bathrooms. You might think it’s a strange thing to talk about during a food review, but the bathrooms were just so cool that I can’t not mention them!

How far is too far to drive for a delicious vegan meal? Well, on a recent weekend my friend Jamie and I decided that driving 3.5 hours to Aspen to eat at the Pyramid Bistro was perfectly reasonable and so we did just that.

Unfortunately, the owners of Pyramid decided to close before the end of the ski season and didn’t see any need to post that very important bit of information on their website, but we didn’t let that get us down! We still had tons of fun including some delicious vegan sushi, drinks at the historic Hotel Jerome, and a very educational tour of the Wheeler/Stallard Museum. We’ll be going back this summer because I’m dying to get my hike on, but for now I wanted to share one of the highlights: The Ashcroft Ghost Town!

Colorado is filled with ghost towns, but most of them are just grassy meadows with a sign pointing out where buildings once stood. Not very thrilling.

Ashcroft on the other hand is full of buildings, fifteen in fact, many of which you can still go into – Including the old two-story hotel! A must-see for any history buffs or families traveling through Aspen… and as the pictures below show, it’s actually appropriate for kids of all ages!

It was snowy, but we powered through… and mostly stayed on top of the snow.

All too soon the trip was over, and it was time to sit in the traffic on I70, but luckily we had some of my new favorite snack with us: Bobo’s Oat Bars!

Have you tried these? They’re handmade by a local company in Boulder and are delicious. Also they’re gluten free which doesn’t matter to me, but I know that’s pretty popular with a lot of people these days.

So far my favorite flavors are Maple Pecan and Cranberry Orange. They’re ridiculously good and you must try them. They sell them all over the place, and you can even buy them directly from the website.

Barista Style Creamers

When I opened the box they sent and saw so many containers of the creamer, I knew I was going to need reinforcements… so I did what any nice vegan does, and I shared! I had some happy co-workers that day :) I’ll share their opinions below, but first I want to share mine. I kept one container of the ‘original’ flavor for myself and used some of it for a double batch of my Creamy Broccoli Cheese Soup I was making for a recent Meetup. When I had originally created that recipe I used a soy creamer, and this was my first time subbing something else in… and it worked great! I didn’t notice any difference in the final product, so while I can’t speak really to the taste of the creamer in coffee, I can vouch for how great it works in cooking.

As for the peeps I shared with? One was a lifelong vegetarian who drinks one cup of coffee a day. She said the flavor and consistency were great and would purchase it again. Thumbs up!

The other two were actually husband/boyfriend of my colleagues, both of whom are committed omnivores (although one has recently been diagnosed as lactose intolerant so has been looking for dairy alternatives). The great news is that they really liked it too, and said they’d also purchase it again! These non-vegheads said they really enjoyed the flavor and liked how creamy it was. They had tried other non-dairy creamers in the past and hadn’t been happy with the consistency… until now!

I love introducing non-vegans to vegan products and getting such positive feedback!

Unsweetened Vanilla

These I kept all for my greedy little self :)   To give you a little bit of background, I was never a fan of dairy milk. Other than on cereal or when cooking/baking, I hardly ever consumed it. When I first switched to plant-based milks, I was so pleased with the flavor of the sweetened and vanilla flavors that I went a little wild, ignoring the difference in calories between those versions and the ‘regular unsweetened’ versions. I’ve since switched entirely to the regular unsweetened (always either coconut or almond), but have missed the vanilla flavor. It’s so good on cereal and in smoothies!

The point I’m getting at is that now I can once again enjoy the vanilla flavor, guilt free! It has the same number of calories per serving (45) as their unsweetened coconut milk (the one in the green container), and fewer calories than their original (sweetened) version (in the red container) which has 70 calories per serving!

“Broccoli Cheese Soup” Grilled Cheese

When Go Veggie! (formerly known as Galaxy Nutritional Foods) sent me some of their new vegan shredded cheese and asked if I wanted to participate in National Grilled Cheese month, it was really a no-brainer. Not that I knew it was National Grilled Cheese month until they told me… but once I found out, I was totally in! And so I present to you (drum roll please)… the Vegan “Broccoli Cheese Soup” Grilled Cheese Sandwich!

Vegan "Broccoli Cheese Soup" Grilled CheeseIt’s got steamed broccoli, sweet onions sauteed with garlic, and a delicious mix of Go Veggies! new vegan Mozzarella and Mexican shreds combined with just a little bit of vegan butter. It’s rich, but it also has a ton of broccoli so we’re going to call it a health food, k? What is absolutely healthy is that delicious massaged kale salad in the background – they went perfectly together!

As you can see from the pictures, the shreds melted perfectly. I still have lots of the mozzarella left, so I’m thinking another crazy pizza creation is in my near future, ha ha. I’ll keep you posted of course!

“Broccoli Cheese Soup” Grilled Cheese Sandwich (makes 2 sandwiches)

Ingredients:

  • 4 slices hearty bread (I used a homemade multi-grain ‘cause I’m fancy)
  • Vegan butter
  • 1 heaping cup broccoli florets (it helps if they’re sliced thin)
  • 1+ teaspoon garlic powder
  • Sea salt
  • 2 1/4 inch slices of sweet onion, each sliced in half so you get the long pieces of onion
  • 2 handfuls Go Veggie! vegan cheese shreds (Either flavor would work, I used a mix of both… ’cause I’m fancy!)

Directions:

  1. Schmear butter on one side of each slice and set aside.
  2. Steam the broccoli (I use a colander in a pot of boiling water because maybe I’m not so fancy after all?) until it turns bright green, 5-6 minutes. About halfway through, sprinkle it with the garlic and sea salt and give it a stir.
  3. Water saute the onions just until soft, 4-5 minutes. Give them a sprinkle of garlic too!
  4. In a frying pan over medium heat, lay down your first two slices of bread, buttered side down. Top each with about 2/3 of the cheese, then add the broccoli and onion. Cover the pan and turn the heat down to low, just for a couple minutes. We want that cheese to get reeaaal melty!
  5. Turn the heat back to medium and remove the cover. Add the rest of your cheese and the remaining slices of bread, buttered side up. Now, if you want your sandwich to be a little bit extra decadent, add a little butter to the side of the bread that’s facing the cheese. It’s not required, but it sure is good!
  6. When the bottom slice is browned, flip and continue to cook until the color is the way you like it! Serve immediately!

Mile High Vegan Eats: Sunny Gardens

Ahhh… Vegan Chinese Food. Yes, that’s right, I said VEGAN. In a time when so many Asian-style restaurants are loading their dishes with fish and oyster sauce, finding suitable options at your local Chinese joint can be challenging to say the least. But if you’re lucky, you have at least one local spot where you can get veggie lo mein or maybe some sesame tofu, right? Well, if you’re really lucky, you live within driving distance of Southeast Denver and can pop into Sunny Gardens because not only do they skip the fishy sauce, they also have vegan meat!

Yes. Vegan meat.

Don’t get me wrong, I love me some veggie lo mein and sesame tofu, but ohmygosh what a treat it is to be able to enjoy sweet n’ sour chicken again without all that pesky guilt and those cancer-causing proteins! And since I know you’re probably wondering what the vegan meat is made out of, it seems to be seitan-like. They said it’s made out of gluten, mushrooms and other vegetables. They did have a little problem a couple years back when they switched to a faux meat that contained egg powder (as their yelp reviews show), but happily for us and the hens, they’ve switched back to a fully vegan product!

First of all, does “vegetarian meat soup” not make you laugh? It made me laugh. Also (and this is the bestest), the veg section is on the FRONT COVER of their menu! When vegans and vegetarians visit Sunny Gardens we’re not some kind of second class citizens who need to skulk in the back door and be happy nibbling on fortune cookies dipped in spicy mustard. Oh no. We’re the guests of honor!

And my excitement doesn’t stem only from the possibility of vegan food, oh no. I’m excited because the food here is really good. Really. Really. Good.

My girlie Jamie (speaking of bestest!) and I had dinner here last Sunday. It was my second visit and I couldn’t wait to take her there.

We always share (cause that’s how we roll), and since we couldn’t really narrow it down, we ordered 3 dishes to split. To quote JL, no shame in our game!

Hands down, my favorite was the Sesame Chicken with Tofu. The tofu was all breaded up and fried, and the “chicken” was fried as well, just enough to be a little bit crispy. I also love how there were so many veggies, and the entire plate was ringed with steamed broccoli!

A strong second place goes to the Orange Chicken (which wasn’t spicy like the menu indicated) but still delicious. Again, the “chicken” was a bit crispy and felt very meaty in my mouth. If it had tofu as well, it would’ve tied for first! Once again there were tons of veggies and the wonderful ring o’ steamed broccoli.

This last one was our least favorite, although it was still quite good. It was the Double Delight with Garlic Sauce and included veggie chicken and beef. Jamie thought the flavoring of the ‘beef’ was a bit strong, but I liked it. It wasn’t fried though, so the texture was a little softer.

Favorites and least favorites aside, you can’t go wrong when everything is this tasty! And veeegan!

The restaurant is located in a strip mall just a mile or two off I25 (Yale and Monaco for you locals), and while it’s nothing fancy, it is clean. It seems to be family run, and our server was very nice and knowledgeable.

Did I mention how yummy it was? ;)

Veganissimo A to Z: A Review and Giveaway!

Are you a Veganissimo? According to Reuben Proctor and Lars Thomsen, authors of Veganissimo A to Z: A Comprehensive Guide to Identifying and Avoiding Ingredients of Animal Origin in Everyday Products, a Veganissimo is “one who is vegan to the highest possible standard“, or “the most vegan“.  I’m not sure I’m there yet, but it sounds like something great to aspire to!

If it sounds great to you too, this book can certainly help you get there. Small enough to fit in most purses, this handy little guide can accompany you on all your shopping trips and help you be more informed about what you’re buying.

Broken into 3 main sections: Ingredients, Product Labeling and Vegan Alternative to Animal Ingredients, the book uses easy-to-understand icons and verbiage, making it an easy read (although it’s not the sort of book you would just sit down and read, it’s more of a reference manual).

The Ingredients section was my favorite. The icons, broken down into ‘always/often’ or ‘sometimes/rarely’ include:

  • Vegetable
  • Animal
  • Synthetic
  • Mineral
  • Microbiological

They also make the distinction between animal ingredients sourced from live or killed animals, in case that’s important to you.

The Labeling section was also very informative. As we all know, labels can be both confusing and misleading, and they’re often designed to be just that. Animal agribusiness and many producers profit from the ignorance of customers, and try to keep them in the dark. This book shines a helpful light!

Finally, the Vegan Alternative section gives some great ideas for those who are transitioning or just looking for more information.

I think this book would make a great gift for a vegan pal or someone who’s trying to educate themselves about what, exactly, is in the products they’re buying. I guess my only “complaint” (although it’s not really a complaint!) is that I’d love to see this book condensed into an App that I could just pull up on my iPhone while I’m at the store. For those of us with smartphones that might be an easier alternative. Just a thought!

Sorry I disappeared again! I took a very last-minute trip to FL to see my father before he has surgery. I have recipes from last week to post (as soon as I have time to go through the photos) and I also have some yummy vegan finds in Daytona Beach to share, believe it or not! But first I want to share my vegan finds at Denver International Airport (DIA).

Whenever I’m flying into a new airport I always google “(airport name) vegan options”, and I love love love when a blogger has already shared their tips, so I figured I’d do that with my home airport.

 

Itza Wrap! Itza Bowl!

First up is Itza Wrap! Itza Bowl! located on Concourse B. Apparently it’s been there for years, but I’ve never noticed it. The other odd thing about it is that the only existing location seems to be at DIA. And they don’t have a website or menu online (I linked to their Yelp! reviews above)

It’s tucked way back in a corner where you come up from the train, so you have to actually look for it. I suppose that’s why I’ve never seen it, but once I did, the word “Tofu” immediately caught my eye!

I didn’t eat here, but I talked to the people working behind the counter and I was told the vegan options are:

  • White rice, brown rice or udon noodles
  • Thai, teriyake or sweet and sour style
  • Tofu or veggies
  • Wrap or bowl

Not bad for airport food, right? And convenient enough to take on the plane with you if you’re in a hurry. And for those of you traveling through DIA who aren’t familiar with it, even if you’re flying through concourses A or C, the train between only takes a couple of minutes, so don’t be scared to explore!

 

Einstein Bros Bagels

Note: Einstein Bros used to use L-Cysteine in their bagels, an enzyme made from duck feathers. However, as of 2012 they have switched over to a synthetic form of L-Cysteine which does NOT use duck feathers! However there’s still some debate/confusion as to whether their bagels are vegan, so eat with caution!

Next up is my favorite DIA snack (and what I grabbed before hopping my flight to Orlando last Thursday)- the Veg Out. Depending on the bagel you choose, it’s automatically vegan (most of their bagels are vegan as well, other than those with cheese. Here’s their nutritional info.) It’s schmeared with hummus then piled with tomatoes, sprouts, lettuce and red onion. When I’m flying, I usually ask for it sans onion, just so I don’t kill the poor guy sitting next to me ;) They’ll usually offer other options, such as tomato sauce, but I always skip that- especially if I’ll be eating it on the plane. It’s located in Concourse C, but again… it’s a quick train ride from any other concourse.

I wish I had a picture to share, but I didn’t end up eating it until 2 or 3 hours later- I was too busy flirting with a gate agent for a free upgrade. Which worked, BTW! He said I was pretty :)   Happy Valentines Day to me, right?

 

Caribou Coffee

I haven’t stopped at Caribou Coffee in a while, but the last time I did they had some pre-packaged vegan and gluten-free snack bars called Earnest Eats. They actually had the word “vegan” printed on them! These coffee shops are all over DIA, upstairs from security in the main terminal as well as concourses A, B and C.

We all know the vegan options at “the bell”, right? (and if thinking about them just made you hungry, go check out my veganized crispy potato soft tacos!)

Mile High Vegan Eats: Sputnik

Now that I’m finally living in a very vegan-friendly city (for the first time since being vegan) I thought maybe I’d start reviewing some of my favorite spots for vegan grub. There are just so many great places to eat here, and I want to share in case any of you are planning a trip to the Mile High City!

First up is Sputnik, a “hipster dive bar” on Broadway. It’s just a few minutes south of downtown which makes it perfect for me to meet a friend for lunch on a weekday. Well, they’re perfect for a meal anytime because they have a full bar AND they serve brunch till 3:00 with vegan options!

Reia and I have had lunch there a couple times, and have always been very pleased with the food. Their menu makes me sooo happy! Although they’re not an all-vegan restaurant (they serve meat), all but 2 items on their menu are either vegan or vegan optional. For example, you can order a Cubano and get it with jackfruit while your omni friend can order his with pork. They also have a ton of special sauces for the fries, most of which are vegan.

My absolute favorite menu item is the Falafel Wrap: Israeli Style.

It’s warm crispy falafel, hummus, cucumber salad, pickles and french fries all wrapped up in a thick tortilla and then crisped on some kind of press. The way they make it is perfect, because everything stays inside the wrap, where you want it. And those fries!? If you go, get half n’ half sweet and regular, and definitely get the habanero jam for dipping. Trust me, you wont regret it.

My second favorite thing to order would have to be the Hush Puppies.

These little corn fritters are automatically vegan and come with a roasted jalapeno sauce that complements them perfectly. They’re so crispy on the outside and mealy on the inside you’ll want to eat them all, but you wont be able to. Share.

Also yummy? The aforementioned Cubano made with spicy jackfruit, mustard and pickles. You have to order this one vegan otherwise you’ll get cheese on it. This one is actually a bit spicy for me, so I only like to order it when I’m also having beer…

Oh, and how about a vegan Hand-dipped Corn Dog!? That’s right- that’s smoked tofu in there! I didn’t try it, but Reia assured me it was great.

So that’s the food. As I mentioned, it is a hipster dive bar and as with all hipster dive bars (in my experience at least), the bathroom is just gross. And the tabletops are always sticky. But the food is really good, so just pee before you go and bring some purell or something :)

In-Home Pet Euthanasia

Enough time has gone by since my Betty passed for me to be able to write this post. I still miss her and think about her nearly every day, and while I hardly ever cry over her anymore, I still remember all the happiness and love she brought into my life. And I can finally laugh when something reminds me of her, or when I see another basset hound walking down the street.

Knowing when it was time to put her to sleep was one of the hardest decisions I’ve had to make, but knowing that I could do it at home made it a bit easier for me, so I wanted to share with you what I’ve learned about the process.

Not everyone is aware that in-home euthanasia services exist- I wasn’t until a few years ago when a friend mentioned it to me. Although the specifics will vary from company to company, the basics are the same: A licensed veterinarian and vet tech will come to your home and put your pet to sleep. They’ll bring all the medications and other supplies needed, and for an additional fee they’ll take your pet’s body with them when they go, if you wish to have it cremated. They do everything the same way your family veterinarian would do it, the main difference being that your beloved pet never has to leave the comfort of her favorite couch, or his favorite pillow. You can spare your pet the distress, discomfort and fear of a car ride and trip to the vet’s office while still providing a painless (for them, anyway) goodbye.

This website contains a directory of companies offering in-home euthanasia by state as well as for Canada. Another resource you shouldn’t overlook, if you’re considering this option for your pet, is to ask your own veterinarian if they make house calls. I just assumed that mine didn’t, but when I told them about the service I used for Miss Betty, I learned that he does actually make house calls.

I used Peaceful Partings, and for any readers in the Pikes Peak region, I cannot recommend them highly enough. They sent out a veterinarian and two vet techs to assist, and these three women were so caring and compassionate not only towards Betty and myself, but also to my other dogs. After they had given Betty a sedative but before giving her the final injection, while Jason and I were spending our last few minutes with her, they brought out treats for Sally and Cooper and not only kept them occupied, but also kept their spirits up. It’s easy to forget about the feelings of your other pets, but we shouldn’t. They can sense that something is happening- they know that you’re sad, and soon they’ll realize that their furry little sibling is gone.

After they gave Betty her final injection, they monitored her heartbeat until she had passed. Then they all went back outside to give us time to grieve as a family. This was another moment where I felt it was important to be euthanizing Betty at home: It allowed our other pets to sniff her body after she had left it. I’ve read that allowing your other pets to do this can minimize or prevent altogether their own confusion and grieving processes. It’s certainly less confusing to them than to have a pet leave with you in the car one day and just never come back.

When we were ready, they came back in and took a clay cast of her pawprint for us to keep. We said our final goodbyes, and they gently wrapped Betty in a sheet and carried her out to their car. A couple of days later they delivered her ashes back to us in a beautiful hand-carved wooden box.

They made a very painful event easier for me, and for that I’m grateful to them. I’m also glad that I didn’t have to leave an exam room and walk back out through the vets office sobbing. If pressed for one thing I would’ve liked for them to do differently, the only thing I would suggest would be to not have left a folder full of sad poems with me after they took Betty. Every time I’d finally stop crying, I’d look at those poems and lose it again. If nothing else, those poems should have a warning label on them! I’ve never seen anything so sad!

In all seriousness though, for anyone reading this who knows they’ll soon have to say goodbye to a beloved pet, please consider having them euthanized at home. It truly is the most compassionate option for your pet, and it also makes it easier on your whole family, both those with and without fur.

I first discovered Fruitables about 6 months ago at my local Petco. I was on my usual pilgrimage for vegan kibble and I like to check out the selection of treats. Before Betty got sick I always baked their treats at home, but now that she can’t partake it doesn’t seem fair to fill the house with the wonderful scent of baking peanut butter. It’s not always easy to find vegan treats in the mainstream stores like petco and petsmart, so I usually end up annoyed- picking up package after package of treats that look healthy/interesting/vegan only to see “chicken stock” or something similar in the ingredients list.

Fruitables caught my eye with their amazing flavors, including Pumpkin Banana, Sweet Potato Pecan and Pumpkin Blueberry! I grabbed a bag and turned it over- all the ingredients  appeared vegan friendly with the possible exception of  “mixed tocopherols” which can be derived from either and plant or animal sources, but I tweeted the company and was promptly informed theirs were all plant-sourced. Perfect! I’m a huge fan of their ingredients- simple, vegan and healthy (example: Pumpkin Apple):

Pumpkin Cranberry was the first flavor I brought home. As soon as you open the bag you’re amazed by the smell- you’ll swear you’re holding fresh baked human cookies or muffins!

Dogs love these crunchy little treats and you’ll enjoy giving them to your furry little best friends because they’re healthy and vegan!
