Combine the rice and water in the IP. Lock the lid and set the steam release valve to 'sealing'.
Use Manual setting for 22 minutes. When done, leave the rice in for another 10 minutes on the Stay Warm setting - but make sure you set a timer. You don't want to leave it in any longer than that, as it does continue to cook a little.
Remove the inner pot from the IP. Stir in the cilantro, lime juice and zest. Add just a dash of cumin, and then salt to taste. Serve warm.

This makes ~4 to ~5 cups of rice, depending on the type of rice you use.
