Blueberry Banana Bread

Ingredients

  • 1/4 cup cashew milk unsweetened
  • 1 tsp apple cider vinegar
  • 2 cups all purpose flour
  • 1 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup vegan butter room temperature
  • 3/4 cup white sugar
  • 3 very ripe bananas mashed with a fork
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

  • Preheat the oven to 350 degrees and lightly coat an 8x4 bread pan with nonstick spray. Set aside.
  • Whisk together the milk and vinegar, and set aside.
  • Whisk together the flour, baking soda, and spices in a small mixing bowl. In a larger mixing bowl, cream together the butter and sugar with a hand mixer, then add in the bananas, milk/vinegar, and vanilla. Mix just until blended.
  • Slowly add the dry ingredients, again being careful not to overmix. Gently fold in the blueberries then pour the batter into the bread pan. Bake for 50-60 minutes or until a toothpick comes out clean.
