Method
- Combine the rice and water in the IP. Lock the lid and set the steam release valve to 'sealing'.
- Use Manual setting for 22 minutes. When done, leave the rice in for another 10 minutes on the Stay Warm setting - but make sure you set a timer. You don't want to leave it in any longer than that, as it does continue to cook a little.
- Remove the inner pot from the IP. Stir in the cilantro, lime juice and zest. Add just a dash of cumin, and then salt to taste. Serve warm.
Notes
This makes ~4 to ~5 cups of rice, depending on the type of rice you use.
