I’m a huge fan of Happy Herbivore and all of Lindsay’s cookbooks, but I have to say this is my favorite by far. All of her recipes are simple, easy, delicious and HEALTHY! I’m not always a low-fat or oil-free vegan but I definitely try to eat like that sometimes, and her cookbooks are my go-to when I want a yummy-yet-healthy meal.

One of the cool things about this cookbook is how it’s separated into different regions of the world so you can always find something that appeals to you, no matter what kind of mood you’re in. A great example is her Gazpacho, recipe below:

Lentil taco “meat” (page 43)

I’m quite in love with this lentil taco meat.  It’s super quick and easy to make in the food processor and has so many potential uses. It’s the perfect (healthier) alternative to those “hamburger crumble” type mock meats.

I’ve tried a few other recipes that I didn’t photograph, including Thai noodle soup and Pineapple rice and loved them all. Bottom line, this recipe is full of recipes that will appeal to all types of eaters, both vegan and omnivore (and everyone in between!).

Gazpacho

Gazpacho originates from Andalusia, my favorite part of Spain, and it’s traditionally vegan. The first time I ever had gazpacho was actually in Andalusia, back in 2007. Scott and I had just arrived in Seville (pronounced like “sa-vee-ya”) and dipped into the first cafe we saw hoping to find a quick bite to eat. It was fairly late in the afternoon, just after siesta, and the restaurant wasn’t yet serving its dinner menu (Spaniards eat dinner rather late at night by American standards — after 9:00 p.m.), but the waiter offered to bring us two bowls of gazpacho leftover from lunch.

The idea of a cold soup initially sounded strange to me, but I was so hungry and melting under the fierce Andalusian sun that I was willing to try anything that was cold and nourishing. After a few spoonfuls, I felt shameful for being so pessimistic—gazpacho is deliciously light and refreshing! Now I look forward to having a bowl every time I visit Spain, and it’s one of my favorite recipes to make in the summer when tomatoes are in season and overflowing in my garden.

Serves 2

  • 1 slice stale or toasted bread
  • 3 plum tomatoes
  • 6” cucumber
  • 1-2 garlic cloves
  • 1 red bell pepper, seeded
  • 2-3 green onions
  • hot sauce (optional)
  • red wine vinegar (optional)
  • water

 

Chef’s Note: For a cool and refreshing soup, store your veggies in the fridge before use. You can also add an ice cube to the mix, if necessary.

Chef’s Note: The heel of the bread is best in this recipe. Finally a use for the heel!

Combine all ingredients in a blender and pulverize into a soup, adding ice cold water as necessary to achieve the right smoothness and soup consistency. If you do not have a strong blender, you may need to chop your vegetables up beforehand. Taste, adding hot sauce or red wine vinegar to taste, if desired. In Spain, gazpacho is topped with chunks of raw vegetables like Spanish onions, green bell peppers, and celery.

Per serving: Calories 118, Total Fat 1.2g, Carbohydrates 24.1g, Dietary Fiber 5.3g, Sugars 12.5g, Protein 5.7g

May I Be Frank: A Giveaway

The first email I received from the producers of May I Be Frank really struck a chord with me. It referenced a man with hepatitis C and a weight problem, and how a change in his diet saved his life. My father had hepatitis C and a weight problem and I knew I wanted to share this documentary with him. Unfortunately I didn’t have time, but I feel like it can hopefully still help other people, and to that end I’m excited to announce that we have TWO copies of the documentary to give away!

Through Frank’s metamorphosis, we witness the powerful effects of change upon one person’s life, and the potential we all have to find the most important love of all – love of ourselves.

Although Frank does adopt a vegan diet as part of his new lifestyle, food really isn’t the focus of this film. It’s much more about his personal and emotional growth. And, honestly, his BMs. Frank is hilariously honest and open about everything he goes through (especially his BMs, ha ha), and the parts where he interacts with his ex-wife and daughter were especially moving for me.

Barista Style Creamers

When I opened the box they sent and saw so many containers of the creamer, I knew I was going to need reinforcements… so I did what any nice vegan does, and I shared! I had some happy co-workers that day :) I’ll share their opinions below, but first I want to share mine. I kept one container of the ‘original’ flavor for myself and used some of it for a double batch of my Creamy Broccoli Cheese Soup I was making for a recent Meetup. When I had originally created that recipe I used a soy creamer, and this was my first time subbing something else in… and it worked great! I didn’t notice any difference in the final product, so while I can’t speak really to the taste of the creamer in coffee, I can vouch for how great it works in cooking.

As for the peeps I shared with? One was a lifelong vegetarian who drinks one cup of coffee a day. She said the flavor and consistency were great and would purchase it again. Thumbs up!

The other two were actually husband/boyfriend of my colleagues, both of whom are committed omnivores (although one has recently been diagnosed as lactose intolerant so has been looking for dairy alternatives). The great news is that they really liked it too, and said they’d also purchase it again! These non-vegheads said they really enjoyed the flavor and liked how creamy it was. They had tried other non-dairy creamers in the past and hadn’t been happy with the consistency… until now!

I love introducing non-vegans to vegan products and getting such positive feedback!

Unsweetened Vanilla

These I kept all for my greedy little self :)   To give you a little bit of background, I was never a fan of dairy milk. Other than on cereal or when cooking/baking, I hardly ever consumed it. When I first switched to plant-based milks, I was so pleased with the flavor of the sweetened and vanilla flavors that I went a little wild, ignoring the difference in calories between those versions and the ‘regular unsweetened’ versions. I’ve since switched entirely to the regular unsweetened (always either coconut or almond), but have missed the vanilla flavor. It’s so good on cereal and in smoothies!

The point I’m getting at is that now I can once again enjoy the vanilla flavor, guilt free! It has the same number of calories per serving (45) as their unsweetened coconut milk (the one in the green container), and fewer calories than their original (sweetened) version (in the red container) which has 70 calories per serving!

Veganissimo A to Z: A Review and Giveaway!

Are you a Veganissimo? According to Reuben Proctor and Lars Thomsen, authors of Veganissimo A to Z: A Comprehensive Guide to Identifying and Avoiding Ingredients of Animal Origin in Everyday Products, a Veganissimo is “one who is vegan to the highest possible standard“, or “the most vegan“.  I’m not sure I’m there yet, but it sounds like something great to aspire to!

If it sounds great to you too, this book can certainly help you get there. Small enough to fit in most purses, this handy little guide can accompany you on all your shopping trips and help you be more informed about what you’re buying.

Broken into 3 main sections: Ingredients, Product Labeling and Vegan Alternative to Animal Ingredients, the book uses easy-to-understand icons and verbiage, making it an easy read (although it’s not the sort of book you would just sit down and read, it’s more of a reference manual).

The Ingredients section was my favorite. The icons, broken down into ‘always/often’ or ‘sometimes/rarely’ include:

  • Vegetable
  • Animal
  • Synthetic
  • Mineral
  • Microbiological

They also make the distinction between animal ingredients sourced from live or killed animals, in case that’s important to you.

The Labeling section was also very informative. As we all know, labels can be both confusing and misleading, and they’re often designed to be just that. Animal agribusiness and many producers profit from the ignorance of customers, and try to keep them in the dark. This book shines a helpful light!

Finally, the Vegan Alternative section gives some great ideas for those who are transitioning or just looking for more information.

I think this book would make a great gift for a vegan pal or someone who’s trying to educate themselves about what, exactly, is in the products they’re buying. I guess my only “complaint” (although it’s not really a complaint!) is that I’d love to see this book condensed into an App that I could just pull up on my iPhone while I’m at the store. For those of us with smartphones that might be an easier alternative. Just a thought!

Jalapeno-Honee Cornbread and a Sweet Giveaway!

Honey? No… HONEE! A completely vegan alternative to honey, Honee is made from apples and is 100% natural. According to their website, it’s made with “only three all natural ingredients; apple, vegan quality sugar, and lemon juice. There is nothing artificial, no added color and no corn syrup.” Honee is available for purchase online as well as through multiple retailers nationwide.

They suggest using it on pancakes, and really you can use it anyway you might use honey (or agave), like in your tea or oatmeal. It’s sweet, but also a little tart- because it is, after all, made from apples. I love the flavor, it’s unique and has worked wonderfully each time I’ve tried it.  Last week I used it for baking, when I made Japapeno-Honee Cornbread. It worked perfectly! The sweet corn and honee were perfectly balanced out by the crisp little bites of jalapeno. I served these alongside a sort of “tex-mex” tofu/bean/rice/cheese bake, the recipe for which I promise to post soon!

Jalapeno-Honee Cornbread (makes 12 mini-loaves)

Adapted from PPK recipe

Please note: This recipe was baked at high-altitude. Also, I used a mini-loaf pan, if you use a muffin pan the final number will come out differently.

Ingredients:

  • 1 cup flour, plus 2 Tablespoons
  • 1 cup cornmeal
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 3/4 cup soy milk
  • 3 Tablespoons Bee Free Honee
  • 2 Tablespoons soy yogurt
  • 1 cup sweet corn kernels
  • 2 Tablespoons minced jalapeno
  • Non-stick spray

Directions:

  1. Preheat oven to 400 and spray mini-loaf pans with non-stick spray.
  2. In a large bowl mix together all the dry ingredients, and in a separate bowl mix everything else except for the corn and jalapenos. Fold the wet ingredients into the dry, then gently stir in the corn and jalapeno. Don’t overmix.
  3. Fill the pans to about 2/3 full and bake for 20-25 minutes. Depending on your altitude, you might need to add a few more minutes at the end. You’ll know they’re done with they pass the toothpick test :) Serve with vegan butter!

I first discovered Fruitables about 6 months ago at my local Petco. I was on my usual pilgrimage for vegan kibble and I like to check out the selection of treats. Before Betty got sick I always baked their treats at home, but now that she can’t partake it doesn’t seem fair to fill the house with the wonderful scent of baking peanut butter. It’s not always easy to find vegan treats in the mainstream stores like petco and petsmart, so I usually end up annoyed- picking up package after package of treats that look healthy/interesting/vegan only to see “chicken stock” or something similar in the ingredients list.

Fruitables caught my eye with their amazing flavors, including Pumpkin Banana, Sweet Potato Pecan and Pumpkin Blueberry! I grabbed a bag and turned it over- all the ingredients  appeared vegan friendly with the possible exception of  “mixed tocopherols” which can be derived from either and plant or animal sources, but I tweeted the company and was promptly informed theirs were all plant-sourced. Perfect! I’m a huge fan of their ingredients- simple, vegan and healthy (example: Pumpkin Apple):

Pumpkin Cranberry was the first flavor I brought home. As soon as you open the bag you’re amazed by the smell- you’ll swear you’re holding fresh baked human cookies or muffins!

Dogs love these crunchy little treats and you’ll enjoy giving them to your furry little best friends because they’re healthy and vegan!

Beanfields Review & AMAZING Giveaway!

You’ve probably read at least one review of Beanfields by now, but this review is special. Why, you ask? Well, firstly because it’s MY review, and secondly (and most importantly) it’s accompanied by a truly amazing giveaway! But first, the review*.

That Was Vegan Beanfields

My Two Favorite Flavors!

I had heard there was a vegan nacho-flavored chip set to hit the market, but I knew next to nothing about it. Honestly, I had kind of forgotten about it… until an email from the kind folks at Beanfields landed in my inbox! They asked if I’d be interested in trying and reviewing their vegan chips; I responded with a “Heck yah… and can you throw in a few for my readers as well?

Seriously, am I always looking out for you guys or what!?

The first bag I opened was, of course, the Nacho flavored. My first reaction was how different these looked from that other nacho chip we all used to eat before we smartened up. Right off the bat I could see that these were less processed, less artificial, less.. scientifically engineered. Then I took a bite. THEN I inhaled the entire bag. Don’t judge me- it was one of the single-serving bags, I promise!

The first bite was a little disconcerting to my taste-buds… I suppose I was expecting something more doritos-like, and although these taste very nacho-y, they taste nothing like doritos. The texture was also different from what I was expecting. They’re crispy, but in a different way from corn-based chips that have been fried. This isn’t a bad thing, they’re just different. And different is good! I’ll admit that I plowed through these pretty fast. I had every intention of saving a bag to share with my friend Lauren, but I didn’t. I ate them all. Sorry, Lauren :)

The sea salt flavor (not pictured) was the 2nd that I tried. Other bloggers have already mentioned this, and I have to agree- there wasn’t nearly enough salt on those puppies. They weren’t bad, but they didn’t pop for me at all. We ended up using those for dipping, and later on for schmearing Daiya Havarti on. They were perfecto for that! Of the 3 flavors though, those are the ones I don’t think I’d go out and buy for myself.

Last, but certainly not least… the Pico De Gallo! These were actually my favorite of the flavors, a fact which may surprise you. Actually, it surprised me… I was prepared to fall madly in love with the Nacho flavor. The flavor was just so robust with just a hint of spiciness- and no dip needed. And just like with the other flavors, you could just tell these were less processed and much healthier than other chips on the market. These (and the Nacho flavor) I would spend money to buy again!

You should also check out their nutrition facts: For example, each serving has as much complete protein as a 4 oz glass of milk, and as much fiber as a 1/2 cup serving of raisin bran! There’s a lot more, those were just two of my favorite highlights. Clearly this is a company dedicated to providing healthier snack options. Their chips are also free of all the major food allergens, and they’re verified Non-GMO.

So Delicious Almond Milk and Ice Cream… and a GIVEAWAY!

I’ve never made a secret of my love of SD’s Coconut Milk. It’s my go-to milk and has been featured in many of my recipes. I love the coconutty taste and, honestly, I love that it’s white. Maybe it’s because I’ve been vegan for less than 2 years, but I really do prefer my milk to be white.

Anyway, when they contacted me about their new line of Almond Milk and Almond Milk ice cream products and asked if I’d like to try them, I couldn’t hit the reply button fast enough.

First up, the ice creams. I really enjoyed the mild background flavor that almond milk provides. It allowed the individual flavors of that ice cream to really pop. My favorite, hands down, was the Butter Pecan. I recommend you buy some right now and eat the entire thing. I also recommend that you leave it sitting on the counter for a few minutes so that it starts to get a little soft, then sprinkle some sea salt on it. Then proceed to stuff your face.

I used the chocolate and vanilla ice creams to make milkshakes (using the SD Vanilla-Flavored Almond Milk), and they turned out fabulous. I probably hadn’t had a milkshake in almost a year, so I was due!

The ice cream bars were also delicious- and the fact that they were hand held made them all that much more fun. The other thing that makes them fun? Ice cream dipped in a thin chocolate shell! Yum! These were Jason’s favorite. In fact, he ate nearly all of them… I think I had one? The vanilla was my favorite of these. The only flavor I wasn’t too terribly wild about, for both the ice cream bars and the pints themselves, was the Mocha Almond Fudge, but I’m not a big fan of mocha or coffee, so this is more a reflection of my personal tastes than the product itself.

Overall, I was really pleased with the ice cream products. I don’t buy ice cream very often, but when I do I’d be happy to buy these!

That leaves the milk. As I said, I’m generally a fan of coconut milks, but I really did enjoy the flavor of these- particular the Original. In order to be able to review it, I drank two glasses of it- and I’ve never, ever been one to drink a glass of milk. Ever! I don’t even drink coconut milk by the glass, but I honestly enjoyed this! The flavor was mild and smooth- I could taste the almond for sure, but it wasn’t overpowering. The Vanilla was the same, but with that extra sweetness- it was wonderful in my spinach-apple smoothies. Honestly, I’ll probably still buy their coconut version,  but if another container of the Almond milk ended up in my fridge I wouldn’t be disappointed.

Chickpea Frittatas and a Lucini Italia Giveaway!

This Lucini Italia giveaway has been in the works for more than a month and I’m so excited to finally get it started! I had purchased a package of Tuscan Fiery Chili Chickpea Frittata mix (also known by it’s traditional Italian name of Cinque e’ Cinque) from my local grocer and loved it. LOVED IT! So I emailed the company and asked if they’d be willing to provide some free product to share with my readers. They were kind enough to not only say YES!, but also to send me a few freebies as well.

So far I’ve made a Chickpea Frittata with kale and tomatoes (recipe below!), as well as a pasta dish topped with their Tuscan Marinara with Roasted Garlic.

This is my second time using their Frittata mix, so it was no surprise that I enjoyed it so much.

Vegan Chickpea Frittata with Kale and Tomatoes

"Cinque e' Cinque" Chickpea Frittata with Kale and Tomatoes

When I first tried these I wasn’t sure what to expect. I’ve had frittatas in my pre-gan days, but couldn’t imagine chickpea flour producing the same consistency. I expected kind of a bread-y consistency, more like cornbread, but that’s not how these are. They’re actually creamy! The top gets a little crunch in the oven, but the center is smooth and creamy. According to the packaging you can also bake them in a larger dish to make it thinner and crunchier, but I just keep going for the creamy version- I can’t help myself! Check out this picture of the thinner version. The only thing I do have to say is that the Fiery Chili is… well, fiery. If you eat a big piece there will likely be some face-fanning going on :)

You can top these babies with anything, or just eat them plain. The package suggests: sprinkle with fresh ground black pepper and serve on a baguette. That sounds really good too! A quick google search tells me you can also add any vegetables or or other flavors right into the mix and bake them all together. Overall, a really flexible product that you could personalize in a million different ways to suit your own palate.

Vegan Chickpea Frittata

My omni husband was a little suspicious at first, but as soon as I convinced him to give it a try, he really liked it. It took him a few bites to get used to the consistency, but then he kept talking about how tasty it was… And he really liked the spicy flavor of the “Tuscan Fiery Chili”!

Their Marinara was also delicious- I plan to post pictures and a review later this week. But seriously, what could be quicker and easier than sauce you can heat in the microwave without it exploding everywhere!?

Note: not every product that Lucini makes is vegan, but everything they sent me and everything they’ll send the winner is vegan.

Chickpea Frittata with Kale and Tomatoes (6 servings as a main, more as a side or snack)

Ingredients:

  • 1 package Cinque e’ Cinque Tuscan Chickpea Frittata Mix (I used Fiery Chili but any flavor would be yum!)
  • 3+ T Lucini Italia olive oil
  • 2 t sea salt
  • 1 bunch kale
  • 1/2 t minced garlic
  • 15-20 grape or cherry tomatoes, sliced in half

Directions:

  1. Prepare chickpea frittata mix as directed on package. I had to bake mine for nearly 10 minutes longer than they recommended before it firmed up and got that “golden brown” glow about it, but I live about a gazillion feet above sea level, so that could have something to do with it. Also, I baked mine in a glass pie dish instead of a cast iron skillet.
  2. While it’s in the oven, de-stem and chop your kale, then water sautee with the minced garlic. I left mine a little more firm than I normally do, and it added a nice texture with the frittata.
  3. When you’re ready to serve the frittata, simply top with your kale and tomatoes! Voila!
