This recipe wasn’t intended to be an at-home version of the Chipotle rice, although I suppose it kind of turned out to be. This Vegan Cilantro Lime Brown Rice made in the Instant Pot was actually intended to be the base of my Chick’n Fajita Bowl (as you may be able to guess from the other ingredients in the picture…). The thing I love about this rice recipe, which I’ve made four times now, is that it’s easy (hello- the Instant Pot does all the work – I have the Duo 6qt and love it!), and it’s so easy to switch up the flavor profile a little bit. You can add more or less lime and cilantro, or salt, depending on your mood. It’s a perfect side dish for all spicy or Mexican or Latin dishes. 

Also? Can we all please agree that it’s Instant Pot not InstaPot? I get that it’s easier to say and all but jeez people, it’s just a few extra consonants. I think we can put in the effort… although it is a lot to type. Maybe we can call it the IP?

I do have a related confession to make. I’ve really only been using my IP for two things. Easy rice recipes like this one, and to “roast” butternut squash. You know, without heating up the oven. Because –oh did I mention- my central air died a week and a half ago? And it’s been hot af in Denver since then? We’re talking mid 90’s most days. Thankfully my home is brick and stays fairly cool, especially when I open the windows at night.

Of course, Denver is also having the worst pollen season in the history of the world* so sleeping with the windows open means waking up with my throat practically swollen shut, so that’s fun.

Cilantro Lime Brown Rice in the Instant Pot

Ingredients

  • 2 cups brown rice rinsed
  • 2.5 cups water
  • 1/3 cup cilantro chopped (more to taste!)
  • Juice and zest of one lime
  • Dash of cumin
  • Salt to taste

Instructions

  • Combine the rice and water in the IP. Lock the lid and set the steam release valve to 'sealing'.
  • Use Manual setting for 22 minutes. When done, leave the rice in for another 10 minutes on the Stay Warm setting - but make sure you set a timer. You don't want to leave it in any longer than that, as it does continue to cook a little.
  • Remove the inner pot from the IP. Stir in the cilantro, lime juice and zest. Add just a dash of cumin, and then salt to taste. Serve warm.

Notes

This makes ~4 to ~5 cups of rice, depending on the type of rice you use.
