YumUniverse: Cookbook Review & Giveaway, PLUS Roasted Red Pepper and Tomato Bisque

Happy Friday, I hope you’re ready for another giveaway! A copy of the new YumUniverse Cookbook (print or e-book, it’s up to you), and the YumUniverse Holiday Survival Guide (e-book). I’m also sharing the recipe for this delicious Roasted Red Pepper and Tomato Bisque!

Okay, so you’re all probably already familiar with YumUniverse the blog, but now there’s a book, too! And the thing this, YumUniverse: Infinite possibilities for a gluten-free, plant-powerful, whole-food lifestyle is more than just a cookbook.  Heather Crosby provides tons of background information on food science, nutritionism, and even a whole section of fruits and veggie storage! Basically, this book could be the perfect go-to for a new vegan. Perhaps there’s someone on your Christmas list who would appreciate a copy…?

There are tons of recipes too. I made the Creamy Broccoli and Red Pepper Macaroni (p. 236) and loved it:

It has a creamy cashew-based sauce and tons of fresh veggies. Plus it’s a pasta, which is perfect for the cold weather we’ve been having here. The funny thing is that back when I reviewed The China Study All Star Cookbook, one of the recipes I chose to try was… Creamy Broccoli and Red Pepper Macaroni! I didn’t realize it was the same one until I had already started making it, so I grabbed a copy of TCSAS cookbook off the shelf and there it was, contributed by Heather Crosby. Clearly that recipe speaks to me, haha. 

For breakfast one morning (before work, which tells you how quick and easy this was) I made the Strawberry-Banana Crunch Snack Wraps (p. 260), which Heather describes as a healthier version of a PB&J:

What you’re seeing there are leaves of Boston bibb lettuce stacked with fresh strawberries, seeds and nuts. I had to improvise a little (chia seeds instead of hemp, and I skipped the sliced almonds) but ohmygoodness were these delicious! So light and fresh and I felt really good after eating them, satisfied but not weighed down. A very healthy breakfast or snack!

Roasted Red Pepper & Tomato Bisque
Serves 2

Ingredients
  1. 2 red bell peppers, seeds and ribs removed, quartered
  2. 2 large tomatoes, quartered
  3. ½ cup onion, quartered
  4. 1–1 ½ teaspoons sea salt or more to taste
  5. Pinch of black pepper, plus more to taste
  6. 2 teaspoons rosemary leaves, chopped
  7. 4 cloves garlic, sliced in half
  8. 1 ¼ cups veggie stock
  9. 1⁄3 cup cashews, soaked
Instructions
  1. Preheat oven to 325°F and grease a large baking dish with oil, or line with parchment paper. Place red bell peppers and tomatoes face down in baking dish with onion, sprinkle with a pinch of salt and pepper, and roast for 25 minutes.
  2. Remove baking dish and add rosemary and garlic and roast another 7 minutes.
  3. Transfer all ingredients to the blender and purée until smooth. Season with salt and additional pepper to taste. Serve warm, so heat up on the range if you need to.
Notes
  1. psst! This also makes a nice cold soup.
  2. Serve with Cashew Sauce (in the book) and Basil & Pepper Pine Nut Crisps (in the book) to take it all to the next level of tastiness
  3. Add cooked quinoa, buckwheat, lentils, brown or Forbidden rice for more texture..

    I am a bit obsessed with vegan cookbooks and have about 30! I love to just sit and look at all of the yummy looking photos!

    I’m cooking more and more from blogs and internet cooking sites these days, but I still love flipping through cookbooks. I check out interesting-looking ones from the library to decide if I want to purchase them. I’ve only been plant-based for a couple of years, so I just recently passed the point where I have more vegan cookbooks than non-vegan ones.

    Oh my goodness, the bisque looks amaaaaazing! I’m not a big soup fan but I could definitely eat several bowls of that stuff. Yum!

    I have a HUGE Cookbook collection! I had a book case made just to store them all. I love holding a cookbook and browsing through it. I don’t like cookbooks in e-book form

    I think i have about 20 vegan cookbooks sofar but hope to keep my collection growing! I love cookbooks, love the photos and love having it in my hands (paper all the way!). My goal is to make a recipe from my cookbooks at least once a week, to make sure I do try new things and get the most out of them 🙂

    I have a huge cook book collection ranging from older ones passed down by family to one’s I’ve acquired during my travels abroad. I find the best way to learn a new culture is to eat what they eat. I have 2 vegan cookbooks but I’m always looking for more.

    I am more than a little obsessed with books in general, and cookbooks in particular! I probably have 25-30 vegan & vegetarian cookbooks and twice that number in cookbooks that I acquired before going veg. I also have amassed quite the Pinterest recipe collection! My current fave is “Isa Does It”. Thanks for the chance to add a new book to my collection!

    Sadly I have 0 vegan cookbooks but I made my own by printing a lot of recipes and putting them in a binder in protective sheets.

    I absolutely LOVE cookbooks! I especially love vegan holiday ones. My latest is, Happy Herbivore Holiday Gatherings. It still have quite a few non-vegan cookbooks as well. I use them for inspiration and just veganize my favorite recipes from them.

    I have 1 1/2 6 foot tall bookcases FULL of cookbooks! Most are vegetarian, but the vegan cookbooks are beginning to catch up, as my diet changes. This one looks like a real winner!

    I try to make myself actually cook all the yummy stuff I find on Pinterest, but I’m mostly a cookbook traditionalist. I love to get new ones, I read them like novels.

    Mine’s growing continuously mostly through scrounging the charity shops! I love the feel and smell of the book, ebooks can never achieve that..

    I’m fairly new to plant-based eating–15 months and never felt better inmjy entire life–ad have a collection of 10 cookbooks, most recently purchased “Thug Kitchen.” I am learning new techniques and experimenting fueled by blogs like your own!     I probably use about 75% Pinterest, 25% cookbooks at this point. Although sometimes it’s the reverse. I have about 10-12 vegan cookbooks…love them all.

    All my cookbooks are vegetarian/vegan, except for two. I have about 15, and have a hard time not buying every new book that comes out! I also have specific vegan boards on Pinterest that I am always adding to.

    I currently have around 500 cookbooks and have given away hundreds throughout the years. My oldest is a 1915 Knox Gelatin cookbook. Very interesting to see how homemaking and cooking have evolved.
